test: Fix the e2e tests (#41)

Instead of conditionally update the `composer.json` in the test script
for the e2e tests, I updated those to directly use the latest released
version of the codeception adapter and infection. This makes it slightly
faster to execute locally and it's a bit less of unexpected magic.

There is, it appears, still 8.5 to fix but I think it's going to be
about updating the Codeception version. I will do so separately.
