enhance(mcp): Handle missing environment variables gracefully (#359)

Previously, the MCP client would fail to start a server if any of the
environment variables specified in the configuration were not present in
the host environment.

This change modifies the variable collection logic to use `filter_map`,
ensuring that only available environment variables are passed to the
server process. Missing variables are now logged instead of triggering a
startup error, allowing for more flexible configurations where some
environment variables might be optional.
