feat: add stack trace extraction to logging

Enhances the logger to automatically capture and record stack traces
from errors that support verbose formatting. This provides better
context for troubleshooting failures in production by separating the
standard error message from its detailed trace.

*   Enables structured logging of stack traces for compatible errors.
*   Integrates the attribute replacer into the default `slog` handler.
