feat: Add ODF support and table processing

- Refactored PDF processor extract_text method for better modularity
- Introduced ODT processor with full ODF support using odfpy
- Added CSV and Excel file support with table_2_md converter
- DOCX/ODT extract_text yields 4k characters per segment, creating uniform segments that simulate pages and enhance parallel execution
- Added sample files for testing new formats support
