Fix RabbitMQ authentication and ingestion schema resolution (#97)

- Update ingestion/Dockerfile to copy documents/schemas directory into container
  so FileSchemaProvider can locate event schema files during validation
- Configure RabbitMQ credentials via environment variables (RABBITMQ_DEFAULT_USER, RABBITMQ_DEFAULT_PASS)
  with defaults in docker-compose.yml, matching MongoDB credential pattern
- Add guest user with administrator tags to RabbitMQ definitions.json
  with full permissions on virtual host '/'

This fixes schema validation failures in ingestion service and enables
configurable RabbitMQ credentials for different deployment environments.
