fix: Transform empty arrays to undefined in form (#1116)

Fix validation inconsistency where manually created releases would send
undefined values while reused releases would initialize empty arrays.
This caused validation failures due to inconsistent data.

Add emptyArrayToUndefined helper function and apply it to array schemas:
- envSchema: remove default "{}" and transform empty arrays
- portBindingsSchema
- bindingsSchema
- tmpfsOptSchema
- storageOptSchema
- extraHostsSchema
- networksSchema
- volumesSchema
- deviceMappingsSchema

This approach simplifies requests to the backend by ensuring cleaner
and more consistent data submission.
