Update ESLint rules to allow modern syntax supported by knex's minimum node version (#6318)

* Use `eslint-plugin-n` to check conformance with minimum stated node version

The current eslint config hasn't been updated in a while, and it disallows
various syntax that's valid on Node version >=16 (the stated minimum version
of this library in package.json.

Knex dropped support for older versions of node (presumably) as of
https://github.com/knex/knex/pull/5684

* Update README to reflect reality
