fix(git): add concurrency protection and improve error handling

- add mutex to Store for thread-safe git operations
- fix History() to properly handle io.EOF vs other errors
- extract getFileContentAtCommit() helper to reduce nesting
- capture timestamp once in Commit() and Delete() for consistency
- add tests for concurrent commits and timestamp consistency
