Refactor multiple parameters with BackrestExporterConfig struct.

Consolidate 11 parameters into BackrestExporterConfig struct.
Add BackrestExporterConfig struct with all exporter configuration fields.
Replace global MetricResetFlag variable with ResetMetricsAfter struct field.
Extract configuration logging logic into LogBackrestExporterConfig() function.
Simplify tests by using config struct directly.
