refactor(store): simplify DB queries with extended adoptQuery

- extend adoptQuery to handle function (length→octet_length) and keyword (excluded→EXCLUDED) mappings
- simplify GetInfo, Set, SetWithVersion, List queries from switch statements to single-line calls
- add PostgreSQL integration tests for GetInfo and SetWithVersion
- refactor adoptQuery tests into subtests
