#64: Fix Mermaid diagram syntax for version 9.1.3 compatibility

- Remove all emojis from node labels across all diagrams
- Remove special characters causing syntax errors (dots, wildcards, slashes)
- Add Mermaid diagram to data-flow page showing complete workflow
- Add height constraints (400px/600px) for large diagrams with scrolling
- Apply matching blue border to sidebar logo
- Fix sidebar to show both logo and title together
