adds `podTemplateSpec` field to `MCPRegistry` CRD that allows user to customise registry api deployment (#2777)

* adds `podTemplateSpec` to MCPRegistry CRD

users will want to override the templatespec for the registry server and
adding a podTemplateSpec override enables this.
