Replace utilruntime.Must with proper error handling in vMCP code (#2787)

utilruntime.Must panics on error which is not appropriate for library
code that can gracefully handle initialization failures. This replaces
the Must calls in NewK8SDiscoverer and newCRDManager with proper error
returns.

Closes #2782
