docs: Overhaul README with architecture and setup

This commit completely restructures and expands the project
documentation to better serve users and contributors.

*   Updated project overview and capabilities.
*   Detailed the full technology stack (React 19, TanStack Router).
*   Added comprehensive setup instructions, including required
    GitHub OAuth settings.
*   Included contributor sections (scripts, folder structure,
    code conventions).
*   Added reference to the dashboard screenshot.
