Create component demo pages for each package (#2553)

## What changed?

To help improve testing components going forward, I want to start leveraging Vite's development server. This PR creates and populate a root `index.html` file for all packages that demonstrate a component with all its modifiers and variants. These can be viewed by running `npm run serve -w @vrembem/<PACKAGE_NAME>` which will boot up Vite's live dev server for that respective component. This also standardizes vite config files and includes sass exports to all packages allowing imports using the `vrembem/sass` entry point.
