refactor: remove jackpot fields from base game snapshot interface

Remove jackpot-related fields from BaseGameSnapshot including
jackpotTokensCollected, jackpotEligible, jackpotTier,
potentialJackpotReturn, and jackpotWon.

Update tests and documentation to reflect simplified snapshot structure.
Clean up GameInfo component jackpot-related rendering logic.
