Don't exit on invalid _log_fields (#5918)

## Summary

A suggestion: Pomerium shouldn't crash on invalid `*_log_fields`. This
logs an error and continues. It should be safe because of how
`populateLogEvent` works.

## User Explanation

Pomerium no longer crashes on startup if there are invalid fields in
`access_log_fields` or `authorize_log_fields` in the config.yaml.
