refactor: Use shiki core imports

Update `shiki` initialization to use `createHighlighterCore` and the
specific JavaScript regex engine.

This migration leverages modern shiki architectures for better tree-
shaking and reduced bundle size by ensuring we only import necessary
components and dynamically load themes.
