refactor: Use constructors for git and ui clients

Introduces explicit `NewClient` constructors for both the
`git` and `ui` clients.

This allows for centralized initialization logic, such as
configuring the spinner within `ui.NewClient`, and removes
redundant initialization steps and nil checks in methods
like `StartSpinner` and `StopSpinner`.
