build(deps): Use stable `assert_matches` crate (#305)

The project was using the unstable `assert_matches` feature from std,
which required nightly Rust. This commit replaces it with the stable
assert_matches crate, eliminating this nightly dependency.

The `unstable-features` lint is now set to warn to prevent accidental
use of unstable features. The nightly toolchain (updated to
`nightly-2025-10-29`) remains configured for `rustfmt`'s unstable
formatting options, but the code itself no longer requires unstable
features.
