feat: Add GEMINI_MODEL environment variable

This introduces the `GEMINI_MODEL` environment variable, allowing users
to specify which model to use (e.g., `gemini-1.5-pro`).

The environment variable loading logic is also updated to ensure a
local `.env` file correctly overrides the global XDG configuration.
