feat: Simpler easing functions (#3532)

Related to a conversation we had on [discord]()

We should have the simpler form of easing functions, `(t: number) => number` instead of backing in lerp and remap into them making them harder to use and customize

`ex.EasingFunctions.*` are deprecated and new ones are available at the root `ex.linear(...)`, `ex.easeInOutCubic(...)`
