feat(build): update version and simplify properties

Reverted `VERSION_NAME` to `1.0.0` and removed unused properties, including `POM_ARTIFACT_ID`, `mavenCentralPublishing`, and `signAllPublications`. These changes clean up the configuration for future updates.

Aligns with ongoing efforts to simplify build properties.
