ci: add Codecov support alongside Coveralls

Added Codecov integration to the GitHub Actions workflow to provide
additional coverage reporting and visualization options.

Changes:
- Updated coverage profile filename to coverage.txt for consistency
- Added Codecov upload step using codecov/codecov-action@v5
- Created codecov.yml configuration with sensible defaults
- Both Coveralls and Codecov will now receive coverage reports

The Codecov integration:
- Only runs on Go 1.25.x to avoid duplicate uploads
- Uses CODECOV_TOKEN secret for authentication
- Includes verbose output for debugging
- Won't fail CI if upload fails

Configuration highlights:
- Auto-adjust coverage targets with 1% threshold
- Ignores testdata and test files
- Provides detailed PR comments with coverage diff
