chore: update multiple dependencies (#270)

* chore: Bump libsql/client,  drizzle-orm and drizzle-kit to latest versions.

* chore: Bump NextJS to latest version (15.5.4)

* chore: Add caret for minor/patch range on dependencies.

* fix: Type inference compiler length limit. TS7056

* Add a explicit type annotation to hint the compiler and avoid deep recursion to kick in on complex types.

* chore: Bump date-fns to latest version. v4.1.0

* chore: Bump framer-motion to v12 and include explicit type for transition config.

* chore: Bump storybook deps + vite to latest versions.

* chore: Bump react and react-dom including types.

* chore: Remove unused dependencies cors, typechain and @typechain/ethers-v5.

* chore: Bump react-ga4 + recharts including peerDeps react-is matching react version.

* chore: Bump pbkdf2 resolutions

* chore: Bump apollo/client and graphql to its latest major. Added new peer-deps rxjs.

* Mostly of the changes are related to imports changes made by the codemod in the imports and types sections.
* Manually removed TS declarations added that are not necessary as we are not using e.g. graphQL directives.
* Applied the codemod to tests files and manually adapt types declaration and jest.mocks.
