Simplify Bedrock provider with ex_aws_auth 1.2.0 and fix streaming

Simplifies Amazon Bedrock provider by upgrading to ex_aws_auth 1.2.0:
- Replaced ~40 lines of manual request signing with AWSAuth.Req plugin
- Migrated to AWSAuth.Credentials struct for credential management
- Updated Finch streaming to use credential-based signing API
- Simplified STS AssumeRole implementation

Also fixes Bedrock streaming which has been broken since Oct 15:
- Fixed deprecated function capture syntax in StreamServer
- Streaming now works correctly for all Bedrock models

Session tokens are now handled automatically by ex_aws_auth.
