refactor(ui): simplify theme toggle to two states with smart default

remove confusing three-state theme cycle and replace with simpler two-state toggle where default is auto (respects system preference) and toggle button cycles between explicit light and dark only. this provides better ux while removing confusion.

update tests to match new behavior
