feat: Add Windows build script and improve shell script

This commit enhances the project's build process by refactoring the existing build script and adding a new one for Windows.

The Unix build script has been improved:
- Renamed from 'build' to 'build.sh' for clarity.
- Added a 'help' command that displays usage and available commands.
- Increased robustness by properly quoting variables to handle paths with spaces.
- Refactored into a 'main' function for better structure.

A new 'build.bat' script is introduced to provide a consistent build experience for Windows users, offering the same set of commands as the shell script.
