* feat: add remaining_quantity support to listings and fulfillment

Add remaining_quantity field to Listing type to track available items in partially filled orders. Update fulfillment logic to automatically use remaining_quantity when unitsToFill is not explicitly specified, preventing transaction failures when attempting to fulfill more items than are available.

Changes:
- Add remaining_quantity field to Listing type definition
- Update fulfillOrder to default to remaining_quantity when available
- Support both Listing (remaining_quantity) and OrderV2 (remainingQuantity) types
- Maintain backwards compatibility when field is not present
- Add comprehensive test coverage for new functionality
- Verify field existence via live API testing
