ci: optimize mobile build with path filter and auto-increment versioning

1. Skip mobile app build when app/ folder unchanged:
   - Added 'check-app-changes' job to detect changes in app/**
   - 'build-mobile' only runs if app/ has changes
   - 'build-push' no longer waits for build-mobile
   - Uses dorny/paths-filter@v3 for reliable path detection
   - Saves ~5-10 minutes on deployments without mobile changes

2. Enable automatic versionCode increment:
   - Added "autoIncrement": true to all build profiles in eas.json
   - EAS will automatically increment Android versionCode on each build
   - No manual version management needed
   - Ensures proper Android update detection
