ci: fix ci not being able to build due to iOS simulator not installed

the CI seems to be using beta versions of xcode and is also trying to run in an iOS simulator with an iOS version that is not installed on the CI machine. I think this can be fixed by using only a stable version of xcode which then should point to an iOS version that is already installed on CI.
