chore(workflows): add parallel support and Coveralls completion step (#337)

- Enabled `parallel` mode in `node_checks.yml` and `deno_checks.yml` for Coveralls.
- Added `coveralls-finish` step in `test.yml` to finalize parallel coverage reports.
