fix(ci): Use PAT for release workflow to bypass branch protection (#53)

This commit updates the `release.yml` workflow to use a Personal Access Token (PAT) instead of the default `GITHUB_TOKEN`.

The release process was failing because the default token does not have permission to push release commits directly to the protected `main` branch.

This change configures the workflow to use a new secret, `GH_PAT`, which should contain a PAT with `repo` scope. This will allow the `release-it` process to push the version commit and tag, successfully completing the release while keeping branch protection rules intact.
