fix(docs): remove sphinx-gitref extension due to Python 3.12 compatibility

- Removed sphinx-gitref extension due to Python 3.12 compatibility issues
- The extension uses deprecated readfp() method that was removed in Python 3.12
- This fixes the ReadtheDocs build failure
- TODO: Re-enable when sphinx-gitref is updated for Python 3.12 compatibility
