Docs: Updates in 'Exported metric concepts' section

Details:

* Docs: Fixed the statement that the exporter only exports Prometheus metric
  type Gauge - it also exports type Counter.

* Docs: Added a statement that the exporter does not specify the optional
  timestamp in its exported metric.
