fix: address Copilot PR review feedback

- Add length check to jsonEscape to prevent panic on empty strings
- Generate proper PNG image (1200x630) for social media from SVG
- Update Open Graph and Twitter meta tags to use PNG instead of SVG
- Add og:image:width and og:image:height for better preview rendering
