Commit Message

fix: Switch Docker registry to GitHub Container Registry

- Changed from docker.io to ghcr.io (no credentials needed)
- Updated README badges (removed broken Docker Pulls, switched Coverage to Coveralls)
- Updated DOCKER.md with new registry paths
- Updated Dockerfile to use Go 1.23

This should fix the Docker build failures and broken badges.
