test: Switch to custom fork of el-mock

Use custom fork of el-mock with extra features, like matchers and any arguments
wildcard.

No changes in tests yet, however test
`difftastic-forge-create-pulreq-show-diff:not-new-pullreq` passes with the new
`el-mock` on Emacs 28. Despite I don't know why, I take that.
