fix: revert to original working phoenix-colocated configuration

Restore the original esbuild NODE_PATH configuration that was working
in the fresh Phoenix setup. Remove custom alias and phoenix-colocated
subdirectory path that was causing CI build failures.

The working configuration uses Mix.Project.build_path() directly
instead of the phoenix-colocated subdirectory.
