* Add path scanning utility and update `swin_tiny` pipeline (#68)

- Introduced `path_scanning` module with a utility for loading image datasets from folder structures into `InMemDataset`.
- Updated `swin_tiny` pipeline to replace `Cinic10Index` with folder-based dataset loading.
- Adjusted training and validation arguments to include dataset root directories.
- Refined augmentation schema with updated blur probabilities and speckle noise integration.
- Removed unused dependencies and cleaned up `Cargo.toml` files.
