fix/docs: unquoted --env SECURITY_TOTP_SECRETS (#1652)

Without quoting --env I was receiving this error:

Fixes docker: invalid reference format

The {"1": "something-secret"} is being interpreted unquoted, which breaks the docker run command because { and : are special shell characters.

✅ Note the single quotes '...' wrapping the JSON env value for SECURITY_TOTP_SECRETS.
