Fix JSON/JSONB handling for pgx simple protocol

Changes types.JSON Value() method to return string instead of [] to prevent pgx from treating JSON data as bytea when using database/sql. This fixes "invalid input syntax for type json" errors with PostgreSQL.

Added comprehensive test coverage for the JSON type.
