Switch to hatchling for build system (#351)

* Switch to hatchling for build system

This commit switches the project's build system from setuptools to hatchling.

The main changes are:
- A `pyproject.toml` file is added to configure the build.
- `versioneer` is replaced with `hatch-vcs` for versioning.
- The old packaging files (`setup.py`, `setup.cfg`, `versioneer.py`, `MANIFEST.in`) are removed.
- `gmailsorter/__init__.py` is updated to retrieve the version using `importlib.metadata`.
