Remove an unnecessary ESLint rule exclusion

The `@typescript-eslint/unbound-method` rule was excluded during the
ESLint 9 migration when upgrading to the new flat config format.

The rules defined in `plugin:jest/recommended` correctly handle this case,
but I must have added them after having already excluded the rule
explicitly in the code. Once I added the Jest ESLint rules, I likely
forgot to check whether the rule exclusion was still needed.
