test: implement basic test with model validator

The commit add a simple mapper test that uses model with a model
validator. This was not possible with the earlier
CurryModel/validate_model_field implementation.

One of the main problems with the initial field validator was that the
validator from pydantic-core calls model validators on every
invocation, often leading to AttributeErrors in the model validator.

This problem is now remedied, model validators are deferred until full
model instantiation (e.g. in the CurryModel constructor).
