* try to fix the smoke test

The disks-images-provider daemonset in the smoke test, constantly fails.

The error from its log is

```
mkdir: cannot create directory '/images/datavolume1': Read-only file system
mkdir: cannot create directory '/images/datavolume2': Read-only file system
mkdir: cannot create directory '/images/datavolume3': Read-only file system
```

Trying to fix it by adopting the latest yaml from KubeVirt, including
the `securityContext.readOnlyRootFilesystem: false` field, that seems
relevant to this issue.

Also, now using the image tag of the KubeVirt version, instead of
"latest", that is now 5 years old.
