Fix markdown escaping in admin info button callback

When clicking the Info button in admin chat for users with markdown
special characters in their names (like underscores), the user link
was lost because the text was re-parsed as markdown without escaping.

This fix escapes the message text before appending spam detection
results, ensuring user links are preserved for all usernames.

- Added escapeMarkDownV1Text() call in callbackShowInfo
- Added comprehensive tests for both normal and special character usernames
- Renamed test function to be more descriptive
- Added documentation to escapeMarkDownV1Text function
