build: Update dependencies (#207)

Updates multiple dependencies to their latest versions. Also updates the
Rust toolchain from `nightly-2025-05-26` to `nightly-2025-07-19`.

The Ollama provider required minor API adaptations to handle new
thinking field requirements in the updated `ollama-rs` crate.
