refactor: simplify Docker setup and configuration

- Remove docker-compose.dev.yml redundant development compose file
- Simplify Dockerfile, remove EXPOSE
- Streamline docker-compose.yml services configuration
- Remove docker/mysql/init.sql, use Hibernate DDL auto
- Remove DOCKER.md, consolidate setup info in README.md
- Update README.md with minimal Docker usage instructions
