Store UUIDs and Datetimes as Native BSON (GSI-1711) (#186)

* Enable native uuids and datetimes for mongodb

* Switch correlation IDs to actual UUIDs

* Switch from motor to pymongo async

* Ditch pipe

* Use file path to access sample uuid test file

* Revert the switch to pymongo async - will do in new PR

* Rename some functions and address feedback

* Make dev responsible for serializing Path-typed fields
